Scientists are investigating new, lesser-known crops, but soy and pea proteins continue to dominate store shelves. A recent discovery from a joint effort involving the University of Campinas (UNICAMP), Germany’s Fraunhofer IVV Institute, and Brazil’s Institute of Food Technology (ITAL) has brought attention to one such candidate: sunflower seeds. In addition to highlighting environmental concerns, this innovative research converts sunflower protein into a suitable meat alternative, giving a sustainable choice for meat lovers, vegetarians, and vegans alike.
The first step in turning sunflower flour into meat substitutes is to extract the oil from the seeds, which produces a residue that is then turned into flour. However, this raw material has husks and phenolic chemicals that give it a black colour and make it less digestible, making it difficult for humans to eat. The study team carefully eliminated these unwanted components to refine the flour, making it suitable for human consumption.
After refinement, the flour serves as a versatile foundation for two distinct meat substitutes: one crafted from textured sunflower protein and the other from roasted grains. Sunflower, olive, and linseed oils, as well as tomato powder and a mixture of spices, are added to both formulations to improve their flavour and nutritional content. After being formed into mini-burgers, these patties are baked and then subjected to stringent laboratory and sensory testing. With its rich profile of heart-healthy monounsaturated fatty acids, increased protein content, and superior consistency, the textured variety was the most notable. This innovation showcases the potential of sunflower protein as a healthy and sustainable meat alternative that caters to a range of dietary needs and supports environmental objectives.

Delivering 49% of the recommended daily intake (RDI) for iron, 68% for zinc, 95% for magnesium, and 89% for manganese, the textured sunflower protein burgers become a nutritional powerhouse.
